When I asked my grandmother if I could have her recipe for Fastelavnsboller (Mardi Gras buns), she replied "well, I just have that in my head?". This is often the answer when I want one of my grandmother's recipes. The world's best birthday buns is also a recipe that she just keeps in her head. That's exactly why I'm so glad I remember to get her recipes so they don't get lost.
Back to the homemade Mardi Gras buns... !!!!This is a recipe for 18 pieces!!!!

350-400g wheat flour
250g butter (half for the dough, the other half for filling inside the dough)
25g yeast
2 tbsp sugar
2 tbsp cold water
2 eggs (+ 1 for brushing)
1.25 dl milk
½ tsp cardamom
? ? ?????? ??°?
? ? ?????? ??°?
Vanilla cream:
3 egg yolks
3 tbsp. sugar
1 tbsp. cornstarch
2.5 dl milk (I use whole milk)
½ vanilla bean
? ? ?????? ??°?
Make the vanilla cream:
Mix vanilla seeds with sugar, then cook with egg yolks, cornstarch, and milk until thickened. Afterwards let that chill for a bit
the dough:
Combine yeast, water, and sugar, then mix with eggs, flour, butter, and cardamom after that u knead until smooth.
Roll out the dough, layer with butter, fold, and let rise.
Cut into squares, fill with vanilla cream, and fold. Let rise again.
Brush with beaten egg, bake at 175°C for 15-20 minutes
The cream filling part can be kinda hard, but just imagine ur making dumplings
