[RECIPE] Nuoc Mam (Vietnamese Fish Dipping Sauce)

Nuoc Mam changed my life when I first tried it a decade ago. Before then, I never tried Vietnamese food at all, and since then it’s been a staple of my diet.
This sauce has the consistency of water and can either be used as a dip for things like springs rolls, grilled meat / steak, fried fish, sautéed vegetables, or it can be poured over various dishes like noodle bowls or really anything you want.
Over time I refined this simple recipe to fit my taste, so give it a try and adjust accordingly (or don’t).
Ingredients:
-1/2 cup water
-1/4 cup fish sauce (3 Lady Brand Preferred)
-3 tablespoons sugar
-3/4 of a lime
-2-4 Sliced Thai chili peppers (Very Spicy Be Careful. Also if you don’t have access to Thai Chilis they can’t be substituted for other chili peppers, sorry ????)
-3 cloves finely minced garlic
Directions:
-Add 1/2 cup of hot water to a bowl.
-Add 3 tbsp Sugar and stir until dissolved.
-Add 1/4 cup fish sauce and stir.
-Add chili and garlic, stir.
-Squeeze 3/4 lime into bowl and stir. Can add more to taste as some limes are stronger and juicier than others. I usually end up adding the last 1/4 of my lime if the flavor isn’t coming through enough.
**Important**
-Refrigerate for at least 30min, preferably an hour before serving. I don’t know what it is, but the flavor profile changes for the better when the sauce is chilled.
That’s it! Simple… but trust me it’s soooo delicious. I use it at least once a week to dip things like steak, lettuce wraps, fried eggs and rice, or just about anything.
