Ingredients:
For the Nordic Pho Broth:
8 cups fish or vegetable broth
1 onion, sliced
2-inch piece of ginger, sliced
3 star anise
3 cloves
1 cinnamon stick
2 tablespoons fish sauce
1 tablespoon soy sauce
Zest of 1 lemon or lime
Salt and pepper to taste
For the Toppings:
Smoked salmon slices
Cooked rice noodles
Fresh dill, chopped
Sliced radishes
Sliced cucumbers
Bean sprouts
Lime wedges
Chili flakes (optional)
Instructions:
Prepare the Nordic Pho Broth:
In a large pot, combine fish or vegetable broth, sliced onion, ginger, star anise, cloves, cinnamon stick, fish sauce, soy sauce, and citrus zest.
Simmer gently for 30-40 minutes to infuse the flavors. Season with salt and pepper to taste. Strain the broth and discard the solids.
Assemble the Nordic Pho:
Divide cooked rice noodles among serving bowls.
Pour the hot Nordic pho broth over the noodles.
Add Toppings:
Top each bowl with slices of smoked salmon, chopped fresh dill, sliced radishes, sliced cucumbers, bean sprouts, and chili flakes if desired.
Serve:
Serve the Nordic Pho with lime wedges on the side for an extra burst of citrus flavor.
