Every year I make at least 4 or 5 sides from scratch for my family’s thanksgiving. It usually runs about 20 people so for years I’ve washed, peeled, boiled, riced, so many pounds of potatoes. I ALWAYS make the crispisty crunchity topping from Bon Appetit to sprinkle on top as well. Potatoes by far took up the most time of any dish.
This year we had Friendsgiving (with about 15 people) a week early and because I got so busy and I make most of the side dishes as well, I caved and bought Idahoan instant mix.
Literally so easy. I added extra milk and butter to loosen them up, added lots of black pepper and some garlic powder, and of course still added the homemade crispy toppings. It killed. It’s so easy and fast.
I have no incentive to go back to the old way for this year’s family thanksgiving. I am just going to live with the secret shame.
