This is one serving size, but can very easily be adapted for more
1 egg yolk
Splash of Water
2 tablespoons of melted butter
Lemon Juice
Cayan Pepper
Paprika
Salt
1) Mix your butter, egg, water, and lemon juice. (I like mine extra tart, so I add two tablespoons. most people would probably prefer one around one teaspoon.)
2) Microwave in 15 second intervals, checking that the mixture is thickening without solidifying. We want the consistency of melted queso here.
3) Mix pinches of paprika, salt, and pepper to preferred taste. Again, I like hot and salty, so I might add more than the average person. Just keep adding pinches until you are happy.
4) Put on eggs benedict, breakfast sandwhiches, pasta, or anything else and enjoy!
