Dex builds in Dark souls?

Ever since I have picked up the souls games, I have always stuck to str builds. The damage per single hit is fantastic and swinging around huge weapons to force huge creatures into submission is so satisfying. Can someone explain the joy of dex builds? I don't get the fun of stunlocking with fast weapons or r2 spam.
