What you need :
Napa Cabbages ( Best, you can use regular cabbages, but you won't see the same taste)
Carrot
Leeks / Green onions / Scallions
Rice Vinegar
Salt (Kosher/sea)
Korean Chilli powder (gochujang) / Gochugaru (chilli powder paste)
Vegetable broth ( you can make this at home in like 30 min, just take all brothworthy veggies, heat them, use the veggies for other stuff, what's left is the broth )
Ginger
Garlic
Sugar
Instructions :
1. Cut the cabbage in square shape. How you do it is up to you.
2. Rinse the cabbage in water, more than a few times
3. Dissolve 4 tablespoons of salt in 2 cups of water.
4. Cabbage in large container and drop salt water in this evenly. After it's coated evenly, leave it for couple of hours (use more salt water if necessary)
5. Mix the gochugaru, sugar, garlic, and ginger with 1/2 cup of water, broth. add rice vinegar if you want. This is the gochugaru mix
6. Cut your other vegetables, add them to the cabbages, add 1 cup of water to the cabbage and add the above gochugaru mix
7. make sure to coat all the cabbages evenly
8. Place the final mix in an airtight bowl for 1/2 - 1 day, in room temperature. Then refrigerate
Final Note :
Now this'll last months, like 6 months ish. I made this and i finished this within 2 months.
