Greetings to all chefs,
Yesterday I tried my hand at Alton Brown oven buffalo wings. We started off by cutting up the wings, cleaning with salt water, and boiled for 10 minutes. Then we put the wings on a rack and into the fridge for an hour to dry out. The wings were then taken out of the fridge, lightly dusted with a mix of baking powder, salt, and corn starch- very light. They went into a 425 degree oven for 30 minutes followed by 2 minutes broil. The wings were taken out and tossed in a mixture of Franks sauce, garlic, and butter.
Flavor was a 10/10. But I wish there was some crunch. I’m here for all suggestions. https://9apps.ooo/
