My husband and I moved into a close knit neighborhood in 2019. Naturally, my in laws and all their children came over to trick or treat. 5 adults and 4 kids. I decided to make Lao chicken (homemade) noodle soup. Google image khao piak sen, if you’re interested.
The first year was a complete fail. I had added too much water to the rice and tapioca flour for the noodles. I ended up still using the broth but added rice for porridge. Everyone loved it but I was obviously disappointed. Second year was a success but on behalf of my wonderful loving husband that took over. I was too flustered. God damn it, I love that man. It came out wonderful.
This year, in 2 days, I am going to speak it into existence that - IT WILL COME OUT WONDERFUL. I GOT THIS. I CAN DO IT. I have been freaking out because it is now 10 ADULTS AND 10 KIDS!!!! I just splurged on the kitchen aid pasta maker attachments so it will not be so laborious. And my husband and I remember the measurements for the noodles. I am also going to do the noodles a day early also, so that come Halloween night, it’s all good vibes.
I realize I am ranting now. Questions: Have you ever had khao piak sen? Do you have a tradition where you cook in large amounts? Tell me about it. Has anyone ever used the kitchen-aid pasta maker attachments? Do you like it?
