Cold Smoked Steak
Works on any cut—as long as you’re not buying crappy steaks you’ll enjoy it.
First—buy a smoke tube similar to this: https://www.amazon.com/LIZZQ-Premium-Pellet-Smoker-Tube/ you can use this smoke tube right in your BBQ—don’t need anything special, it just goes in the corner and smolders, puts out smoke without getting overly hot and cooking your meat.
Uses wood pellets that they sell to use in pellet smoker grills (buy them at Walmart or lowes or similar store...or online if you want). You can use whatever flavor pellets you want—hickory, mesquite, alder, cherry, maple, whatever.
Fill smoke tube with pellets, put it in the corner of your BBQ, and light it up with a torch for about 2 minutes or so to get a nice amount of fire and smoldering pellets. Blow it out and let it smoke.
Season your steak with whatever seasoning you want… Seasoning Salt, sprinkling of Montreal, salt/pepper, light soy, or whatever. Simpler is better, the taste comes from the smoke.
Put your steak in the middle of the grill, away from the smoke tube so it doesn’t get hot or cook at all from the smoldering pellets in the smoke tube. Close it up and let the smoke fill the grill—leave it in there for an hour. It’ll soak up all of that smokey goodness.
Pull it out and fire up your grill, get it as hot as you can and then grill your steak to your desired done-ness. (Medium-rare or rare is best to get the most flavor)
Pull it out, wrap it in tin foil, and let it rest for 6-8 minutes. Afterward, unwrap and enjoy. Best steaks ever.
