Hey guys
I just wanted to share something I've learned today
Purchased my first KG of Sashimi Grade Salmon and I was so curious to try it out
But if you try to eat it as soon as you defrost it, it'll taste fishy
In order to remove the fishiness, many will tell you to lightly cover it in salt and let it brine for 30 minutes in the fridge
Doing so will remove the excess moisture, which carries away also some of the fishy smell
However I've tried this several times and it simply hasn't been enough
What I found out works best is:
0) Wash your salmon and dry it thoroughly
1) Brine it with salt and sugar (1:2 ratio) for 15-30 minutes (depends on the size of your block)
2) Rinse
3) Soak in milk and let marinate for 30 minutes in the fridge
4) Rinse
5) Pet it dry
Enjoy restaurant quality sashimi at home with no effort
