Ingredients for approx. 3 servings:
200 g of spaghetti
100 g of bacon
2 eggs
100 g of sweet, liquid cream 30%
30 g of grated Pecorino cheese (Parmesan or Grana Padano) + some for sprinkling
salt, black pepper freshly ground
chopped parsley (optional)
INSCRUTIONS:
Boil the pasta in salted water, according to the recipe for Strain. Do not spill with water!
Dice the bacon into small cubes. Fry in a pan to the value of the burner power until lightly golden. (If the bacon is very lean, add a tablespoon of oil.)
Put the cream, eggs, cheese, a pinch of salt and a fairly large amount of pepper into a bowl (preferably tall and narrow) and mix with a blender.
Add the cooked pasta to the hot bacon. Fry, stirring for about 1 minute. Frying pan to be taken from the burner, add the egg mass and mix. You can also add chopped parsley. Stir for a while until all the files are well combined and the sauce is slightly thickened. (Better not to stir on the burner to prevent scrambled eggs!).
Put on plates and sprinkle with the rest of the grated cheese.
